Easy Spinach feta Filo Triangles. Perfect vegetarian fingerfood.. We hope you give them a try.
INGREDIENTS:
200 grams feta cheese
70 grams spinach or silverbeet
1 clove of garlic
1 sliced spring onion
160 grams filo pastry
30 grams butter
1 strip of preserved lemon
50 grams breadcrumbs
30 grams cream cheddar cheese spread
vege salt and cracked pepper to tatste
pinch of mediterranean dried spice
METHOD:
Stir fry all but butter and Filo pastry until thick and creamy, over a medium heat, and allow to cool.
Brush Filo sheet with butter and place a blob of cooled mixture in corner. Fold up into a triangle and place on a baking tray lined with baking paper. Brush with butter, may be spread with extra crumbs, sesame seeds or parmesan cheese if desired. Bake in a 180 degrees celsius oven until crispy brown about 15-20 minutes, cool slightly and eat whilst warm as a delicious fingerfood snack.
