Directions for the soup recipe I mentioned:
(Amounts of all ingredients are to your liking, but go heavy on the onions & garlic! It gives great flavor!)
Vegetable broth
Assorted mixed fresh or frozen veggies (peas, carrots, green beans, corn, potatoes)
Onion and garlic
Any kind of beans
Basil
Smoked Paprika
chipotle powder
sea salt
1. The most important thing for the flavor is how you cook the onions and garlic, I put 2 whole onions and garlic bulbs in a food processor and blend up till fine.
2. Add that blended mix to a non-stick pan on medium heat with some vegetable broth to sauté it so the mix can soak up some of the flavor
3. Keep it moving in the pan until the broth is absorbed and evaporated and the mixture is looking very caramelized, (it actually can look a bit like ground beef at this point sometimes.)
4. Add the caramelized mixture to a crock pot along with all your veggies and other ingredients and let it cook for at least 6-8 hours, generally the longer it sits the more the flavor comes out.
5. Usually I serve it over some kind of whole grain like quinoa or rice.
