Jenny, Culinary Resource Coordinator at Central Market Mill Creek, demonstrates her recipe for Apple Cider Gravy. INGREDIENTS:
1 cup apple cider;
2 tablespoons cider vinegar;
6 tablespoons butter;
6 tablespoons flour;
4 cups turkey or chicken broth;
1 tablespoon fresh thyme;
Salt and freshly ground black pepper;
DIRECTIONS: In a medium saucepan, bring apple cider and vinegar to a boil.
Boil until reduced by half.
Add broth and bring to a simmer.
In a separate saucepan, melt butter. Add flour and stir to form a paste.
Continue to cook, stirring constantly, for 2-3 minutes, or until mixture has a slight aroma of popcorn.
Slowly add cider-broth mixture, whisking constantly to smooth out any lumps.
Add thyme. Season to taste with salt and pepper.
Bring to a simmer and stir until gravy thickens. Serve hot.
