This is a simple and quick urad dal recipe which is made by my mother in law
It goes very well with the mix veg pickle I make

Ingredients
1 cup white urad dal or Split, skinned black gram
(washed and soaked overnight or 1 day)
1 small onion sliced
4 garlic cloves finely chopped
3 inch pc of ginger finely chopped
5 to 6 green chillies slit
1 and 1/2 teaspoon salt
2 table spoons chopped fresh coriander
2 teaspoons ghee
2 table spoons oil
1/2 tea spoon hing or asafoetida
For the garnish while serving the Dal
1/4 teaspoon garam masala powder
Some chopped fresh coriander leaves
1 lemon cut in 4 slices
Method
Wash and soak the urad dal overnight. Drain and keep aside
In a pot or kadai add the washed and soaked urad dal, 2 cups water, 1 tea spoon salt and stir
Bring to a boil. You will see a white cloud like thing foarming over the dal, remove this out with a spoon and discard it
Try to remove this white foam as much as possible
Boil the dal for 10 minutes
Check if the dal is cooked by mashing it between your fingers
It should be firm but should get smashed too
Remove from heat and strain the dal
Do not rinse with water
Tempering the dal
Place a kadai or wok on medium heat and add 2 teaspoons ghee and 2 tablespoons oil
Add to this 1/2 tea spoon hing or asafoetida and stir
Add 1 small onion finely sliced and fry until translucent
Add 4 garlic cloves finely chopped, 3 inch pc of ginger finely chopped,
5 to 6 green chillies slit and fry all of this for 2 minutes, until fragrant
Add 1/2 tea spoon salt and fry for another minute
Add 1 cup water to this and simmer for 3 to 4 minutes
Add the cooked dal kept aside to this and stir everything well
Simmer this for another 7 to 8 minutes
The water will get almost dry
Garnish with fresh chopped coriander leaves and remove from heat.
Serve this dal in a plate and sprinkle a pinch or 2 of garam masala powder,
some chopped fresh coriander leaves and squeeze a slice of lime or lemon.
