Dr. Ann Pittier first outlines our improved understanding of type 2 diabetes over time, then presents epidemiological studies show the large decrease in risk in those who follow a plant-based diet. A number of studies have established the physiological basis for the greatly reduced risk for vegans while implicating several substances contained in animal derived foods as pathogenic for type 2 diabetes.
