I found this recipe for Char (Trout Family) in a cook book from Andreas Caminada. I love fish and potatoes so I thought I have to try this out. The Buttermilk ads a nice "sour" note to the potato espuma and the highlight of the dish is the crunchy onions 😊 A "healthy" perfect warm starter recipe that will for sure impress your family and friends. You can do it with other fish as well, just try to get a fish that is relatively mild in flavour 👍
