Sabudana (Sago Pearls) are starchy little white beads that can be transformed into a light, soft bubbly dessert. This Sabudana Pudding recipe is easy— the easiest actually! There's no need of a thickening agent (so no corn flour/starch, no agar agar, no gelatine, etc) because Sabudana itself does the job of helping the pudding set. The Coconut milk— the actual hero of the recipe gives its natural sweet and smooth qualities to the dessert. Food colour is optional, and also Cardamom is not absolutely necessary, so it's a simple 3-ingredient recipe, that can be made with no fuss. Just ensure that it is properly cooked till thick for a proper set :)

Ingredients:
1 US Cup= 240 ml
1 Cup Sabudana (Sago Pearls), washed and soaked in 1 Cup Water overnight
1 Cup Thick Coconut Milk
1 Cup Thin Coconut Milk
1/2 Cup Sugar
1/2 teaspoon Cardamom (optional)
Food colour of choice (optional)
1/4 teaspoon Salt
Oil for greasing
