This keto butter lemon pound cake is ideal for breakfast with a cup of hot tea or coffee, with a cream cheese topping (optional) it is ideal for a meeting between friends. Each slice of cake has only 1.2 net carb, which makes it ideal for this lifestyle, for people with diabetes or people who follow a low-carb diet.
The cake is for approximately 25 slices or portions

INGREDIENTS FOR THE KETO BUTTER POUND CAKE
½ cup of butter
3 cups of almond flour
¾ cup unsweetened almond milk
Striped peel of 2 lemons
1/3 cup lemon juice
1 teaspoon vanilla extract
1½ teaspoons of salt
½ teaspoon baking powder
½ teaspoon baking soda
2 cups of erythritol
5 eggs
½ teaspoon xanthan gum
INGREDIENTS FOR THE CREAM CHEESE FROSTING
¼ teaspoon vanilla extract
4 oz (by weight) of cream cheese at room temperature
½ cup erythritol powder
¼ cup butter at room temperature
