Sanna ~ Delicious, pillowy soft & mildly sweet steamed rice cakes are made from ground rice batter that is fermented with toddy (traditionally) or yeast (modern method). Mop up your favourite veg or non veg curry with these for lunch or dinner or dunk them in a bowl of sambhar and relish a hearty breakfast. They taste yummy with some coconut chutney as well. As a tea time or anytime snack serve them with a dollop of butter or ghee. Some honey or sugar pairs very well with these.
This detailed recipe is for the Mangalorean version of sanna that are made with rice and black gram dal (urad dal) and fermented with yeast. You can make them as sweet as you like if you intend to eat them plain but a fine balance of sweet-salty is essential if you plan to serve them with savoury dishes
