Chef Mehboob teaches everyone's all time favourite recipe of Sindhi Biryani, perfect for your Friday lunches.
👩🍳Recipe:
Half boiled potatoes - 1 kg
Rice (sela chawal) - 1 kg
Cooking oil - 1 cup
Onions (piyaz) - 1/2 kg
Garlic (lehsun) - 2 tbsp
Ginger chopped (adrak) - 2 tbsp
Turmeric powder (haldi) - 1 tbsp
Chicken - 1 1/2 kg
Tomatoes (timatar) - 1/2 kg
*Hot spices (garam masala)*
- Cinnamon sticks (daar cheeni) - 5 to 7
- Cumin (zeera) - 2 tbsp
- Star anise (badiyan) - 4
- Bay leaf (tez paat) - 3
- Cloves (laung) - 8 to 10
- Coriander (dhaniya)
Water as required
Dry plum (aloo bukhara) - 1 cup
Tamarind (imli) - 1 cup (optional)
Crushed red chilli (lal mirchen) - 3 tbsp
Salt as per taste
Green chili paste ( hari mirch) - 1 cup
Additional water - 1/2 cup
*To sprinkle on top:*
Tomatoes sliced
Cumin (safaid zeera) - 2 tbsp
Coriander (dhaniya) chopped - 1/2 bunch
Mint leaves (podina) chopped - 1/2 bunch
Hot spices powder (garam masala powder) - 2 tbsp
Whole green chillies (gol hari mirchen) - 10 to 12
Additional rice on top
Yellow food colour (zarday ka rung) - 1 tbsp
👩🍳Baingan ka Raita
Oil - 1/2 cup
Eggplant (baingan) - 2
Yoghurt (dahi) - 1/2 cup
Salt as per taste
Green chilies sliced (hari mirchen)
Chaat masala powder as per taste
