It’s not potato leek soup! From my number 1 favorite Disney/Pixar animated movie of all time: Ratatouille! Remy really surprised Linguine when he fixed the soup! I’ve always wanted to try out what this soup might taste like using most of the ingredients and process shown in the movie. It was really quite good and I can see why it kick started Remy’s cooking career. I hope you enjoy this version of Remy’s soup!

Ingredients:
6 tbsp butter
1 onion, diced
2 leeks, chopped
4 garlic cloves, minced
28oz crushed tomatoes
1 tbsp sugar
5 cups chicken broth
1/3 cup parmesan cheese, cubed
1 tbsp thyme
1 tbsp herbs de Provence
4 bay leaves
1/4 tsp cayenne pepper
2 cups heavy cream
1/2 cup fresh parsley
Green onion for garnish
Salt & Pepper to taste
