Muffin Sandwiches & Chicken Potato Sandwiches:
Muffin sandwiches:
Ingredients for muffins
Flour 2 cups
Sugar 1 tbsp
Baking powder 3 tsp
Salt 1 tsp
Black pepper ½ tsp
Crushed red pepper ½ tsp
Chopped green chilies 6
Chopped dried tomatoes ¼ cup
Sweet corn ¼ cup
Garlic powder 1 tsp
Chopped garlic 1 tbsp
Coriander leaves 2-3 tbsp
Milk ½ cup
Yogurt 4 tbsp
Melted butter ½ cup
Egg 1
Oil for greasing
Ingredients for sandwich filling
Melted butter 4 ounce
Lemon juice 1 tbsp
Coriander leaves 1 tbsp
Chopped garlic 1 tsp
Boiled & shredded chicken 1 cup
Cream cheese 2 tbsp
Salt ½ tsp
Crushed red pepper ½ tsp
To assemble sandwiches
Lettuce leaves 4
Tomato slices 4
Cheese slices 4
Cucumber slices 4
Mayonnaise mix in ketchup 2 tbsp
Chicken mixture 1 tbsp
Ingredients for cocktail sauce
Mayonnaise 2 tbsp
Ketchup 2 tbsp
Method
• In a bowl mix all the ingredients together with a wooden spoon or spatula.
• Grease and flour the muffin tray.
• Bake at 180°C for 20 minutes.
Method
• Mix boiled and shredded chicken with butter, lemon juice, garlic and coriander.
• Heat a pan and sauté the butter chicken mix. Add in all the other ingredients and seasonings.
To assemble sandwiches
• Cut muffin from center, place lettuce leaves and then a cheese slice.
• Top it with chicken mixture.
• Then place cucumber and tomatoes slices.
• Drizzle some ketchup and mayonnaise.
• Cover with the muffin top, secure with a skewer.
Chicken Potato Sandwiches:
Ingredients for Filling
Boiled potatoes 2
Green chutney 1 tbsp
Boiled shredded chicken 1 cup
Chopped green chilies ½ cup
Green coriander ½ cup
Butter 2 tbsp
Oil 2 tbsp
Chaat masala 1 tbsp
Cheddar cheese 2 tbsp
Salt ½ tsp
Ingredients for Sandwiches
Bread slices 8-10
Sliced tomato 1
Cucumber 1
Sliced onion 1
Butter 4 tbsp
Butter for toasting
Cheddar cheese 1 tsp
Method:
• Heat oil and butter on a flat pan.
• Then fry green chilies.
• Add boiled potatoes, shredded chicken, chaat masala mix well, cook.
• Apply butter on bread slices.
• Apply mixture on slices, then place tomato and cucumber sliced.
• Cover with second sliced and toast these sandwiches.
• Cut diagonally from center.
