South Louisiana is known for its cuisine and the various cultures that developed it. One of those cultures is the Cajun culture that comes from French descendants of colonial Nova Scotia. Meet Horace Trahan and Randy Gallet who have been farming crawfish in rice paddocks for many years. They try to use and keep organic practices because to them, it's natural.
