செய்முறை:
1. பொறியை 2 நிமிடம் வறுத்து தனியாக வைக்கவும்.
2. ஒரு பெரிய கிண்ணத்தில் வறுத்த பொறியை எடுத்துக் கொள்ளுங்கள்.
3. உங்களுக்கு விருப்பமான மிக்ஸ்ர், வறுத்த வேர்க்கடலை, வேகவைத்த உருளைக்கிழங்கு துண்டுகள், பொடியாக நறுக்கிய வெங்காயம், நறுக்கிய மற்றும் விதை நீக்கிய தக்காளி, சேவ் மற்றும் உடைத்த பாப்டி சேர்க்கவும்.
4. உப்பு, காஷ்மீரி மிளகாய் தூள், சாட் மசாலா தூள் மற்றும் நறுக்கிய கொத்தமல்லி இலை சேர்க்கவும்.
5. புதினா கொத்தமல்லி சட்னி, புளி பேரிச்சம்பழ சட்னி, எலுமிச்சைபழச்சாறு சேர்க்கவும்.
6. நன்கு கலந்து, சேவ், நறுக்கிய கொத்தமல்லி இலைகளால் அலங்கரிக்கவும்.
7. சுவையான பேல் பூரி பரிமாற தயாராக உள்ளது!

புளி பேரிச்சம்பழ சட்னி செய்ய
1. ஒரு பாத்திரத்தில் தண்ணீர் எடுக்கவும்.
2. அதனுடன் விதை நீக்கி நறுக்கிய பேரிச்சம்பழம் சேர்த்து மிதமான தீயில் 5 நிமிடம் சமைக்கவும்.
3. புளி தண்ணீர் சேர்த்து மேலும் 2 நிமிடங்கள் சமைக்கவும்.
4. சிவப்பு மிளகாய் தூள், சீரக தூள், கொத்தமல்லி தூள், கருப்பு உப்பு, உலர்ந்த இஞ்சி தூள், உப்பு, பொடித்த வெல்லம் சேர்த்து நன்கு கலக்கவும்.
5. தண்ணீர் சேர்த்து குறைந்த தீயில் 5 நிமிடங்கள் சமைக்கவும்.
6. அடுப்பை அணைத்து, கலவையை மிருதுவான பேஸ்டாக அரைக்கவும்.
7. பேரீச்சம்பழ சட்னி பயன்படுத்த தயாராக உள்ளது.

புதினா கொத்தமல்லி சட்னி:
1. ஒரு மிக்ஸி ஜாரில், பச்சை மிளகாய், இஞ்சி, கொத்தமல்லி இலை, புதினா இலை, எலுமிச்சை சாறு மற்றும் உப்பு சேர்க்கவும்.
2. தண்ணீர் சேர்க்காமல் ஒரு முறை அரைக்கவும்.
3. பிறகு தண்ணீர் சேர்த்து மிருதுவான பேஸ்டாக அரைக்கவும்.
4. அவ்வளவுதான் புதினா கொத்தமல்லி சட்னி ரெடி.
