Today, we'll discuss how to make a delicious homemade pan pizza using a cast iron pan. This recipe makes two full size pizzas, or four personal size pizzas.

Dough Ingredients:
16 ounces all purpose flour
2 1/4 tsp instant yeast
2 tsp kosher salt
11 ounces water
Pizza Sauce Ingredients:
28-ounce of canned tomatoes
2 cloves garlic
1 tsp dried oregano
1 tsp dried basil
1 tsp red pepper flakes
1 ounce tomato paste
Kosher salt
Black pepper
Splash of olive oil
Splash of balsamic vinegar
Cheese and Toppings
16oz mozzarella, shredded
4oz Parmesan, grated
Olive oil
Pepperoni (optional)
Sports peppers (optional)
Red onion (optional)
Directions for Dish :
1. Add the dough ingredients to a large bowl and mix until shaggy, then with floured hands, mix until most of the flour has been taken up, and the dough is moist. Grease a large metal mixing bowl with olive oil and let rise for at least 2-4 hours, or until double in size
2. While your dough is rising, mix all of the tomato sauce ingredients into a blender and mix on high until you have a smooth consistency. If you like a chunkier sauce, you can also great the tomatoes up by hand and finely mince the garlic. Season halfway through to your liking.
3. After your sauce has been blended, add to a large pan on medium heat and lightly simmer for 5-10 minutes until the sauce has slightly thickened, and makes streaks in the pan
4. After your dough has risen, it is time to turn it out. Add flour to a large wooden board and knead for 4-5 minutes while continuing to add flour. At the end, your dough should no longer be sticky and be smooth. Cut in half if you are making two large pizzas, or 4 if you are making personal pan pizzas.
5. To get the best crust on the pizza, use a pizza stone if available. They are often inexpensive and really make the difference. Place this in your oven and heat to its max setting for at least an hour
6. Grease your cast iron pan with olive oil and then add the dough and push to the edges. The dough is going to be a little resistant, as it has not relaxed. Cover with plastic wrap and let sit for 45 min to an hour, at which point you'll be ready to add your toppings.
7. Push the dough to the edges once more, and add some of the pizza sauce, leaving some space at the edges. Then add the mozzarella until the sauce is barely visible, and grate some fresh parmesan on top. Now add your toppings and a splash of olive oil around the edges before placing in the oven. You'll cook the personal pan pizza 10-12 minutes, and the large cast iron for 12-14 minutes or until the cheese is turning golden brown
8. Once finished cooking, immediately remove the pizzas from the cast iron pan and onto a serving tray. Slice into pieces and enjoy!
