How do you like your 🐓 tender 🥪??

Here’s how I made mine:
Ingredients:
• 1 lbs. boneless chicken breasts, trimmed
• 1-2 C flour
• 2 eggs
• ½ C creole seasoning
• 2 C buttermilk
• ¼ C corn starch
• 1 small can chiles in adobo sauce
• 1 ½ C mayonnaise
• 1 lime, juiced
• Water as needed
• 1-gallon peanut oil
• Toppings: white sliced cheese cheese, shredded lettuce, sliced tomatoes, & sliced red onions
• French bread, cut into 6 in. portions & sliced
For the Chipotle Mayonnaise:
1. Add 2-3 chipotle peppers into a blender with the mayonnaise and lime juice. Blend until well combined. Store in the refrigerator until ready to use
**Note: If the mixture is too thick, add 2-4 T water to the blender until desired consistency I reached.
For the Chicken:
1. slice the chicken breasts length-wise in half to create the chicken tenders.
2. Add the buttermilk, eggs, and creole seasoning to a large bowl and mix until well combined. In another bowl, add the flour and cornstarch.
3. Dunk the chicken in the buttermilk mixture before dredging in the flour until well covered. Place the prepared chicken on a wire rack until ready to use.
4. slowly add in the chicken tenders to peanut oil heated to 375 degrees. Once they register at least 165 degrees, remove the chicken and place on a paper towel to dry.
5. Dice up 2 of the chicken tenders and add them to a bowl. Pour in the buffalo-ranch sauce and toss until well covered.
To Finish:
1. Preheat oven to 375 degrees. Meanwhile, take out one of the French bread rolls and slice in half to open. Slather one side with the remaining ranch dressing and add toppings of choice. On the other side, add cheese and top with the diced chicken tenders.
2. Place the sub on a sheet pan and bake until the cheese has melted. Once this occurs, serve & enjoy!
