Make your own roasted red peppers--Mario Batali's got you covered.
Roasted red peppers are smoky and sweet and have infinite uses. They're so much better when you make them yourself, so try this technique demonstrated by Babbo's Chef Rob Zwirz.

ROASTED RED PEPPERS (or any pepper!)
Toss peppers with olive oil, salt and pepper, lay in a pan and place under the broiler.
In about 8 minutes, or when peppers have completely blackened, flip them over and roast the other side until black.
Remove peppers from the broiler. Put them in a bowl and cover tightly with plastic wrap. Leave them to steam for 10-15 minutes, until cool enough to handle.
With your hands, rub off the pepper skins and discard them. If necessary, rinse the roasted peppers under running water. Pull out the steps, brush away the seeds, and enjoy!
