Ingredients—
4 buttermilk biscuits (cut into cubes)
1 c. Buttermilk
2.5 c. Milk
6 eggs (beaten)
6 slices bacon
Chorizo sausage (1 link will work just fine)
2 diced romaine tomatoes
Handful spinach
Salt and pepper to taste
Cheddar cheese
Directions-
1. Preheat oven to 350 degrees
2. Cube 4 biscuits and place in casserole dish
3. Covers biscuits with buttermilk, milk and eggs and mix. Let soak for a few minutes
4. Cook bacon and chorizo. Chop and place in dish
5. Dice tomatoes and place in dish
6. Place spinach in dish.
7. Add salt, pepper and cheese.
8. Stir to combine
9. Bake 45-60 minutes or until eggs have set, cover after 30 minutes.
