It's that time of year and you have an abundance of peppers. One of the things you can do is pickle them! In this video I show you how I pickle my peppers. I pickle some Jalapenos as well as some Aji Mangoes.

Brine Ingredients:

3 Cups of Water
3 Cups of White Distilled Malt Vinegar
3 TBSP Sugar or Sweetener equivalent (Stevia, Splenda etc)
3 TBSP Salt (pickling salt or kosher salt is best)
3 TBSP Coriander Seeds
3 TBSP Pepper Corns
3 Garlic Cloves
3 Bay Leaves

Give the brine a try, and adjust to your tastes after your first time doing it (i.e. make it a little sweeter, or more garlic etc). Just makes sure you have the ratio of water and vinegar the same as above.
