Chettinad Chicken Masala | South Indian Chicken Chettinad | How to make Chicken Chettinad Masala
Chicken Chettinad Masala is a fiery hot chicken gravy from the Chettinad region in Tamil Nadu State in India. This curry from South Indian cuisine is not only popular in India but is one of the most ordered chicken curries in restaurants all over the world.
Chicken Chettinad Curry gets its flavor from the freshly ground spices (Chettinad masala), which makes this dish just irresistible. Traditionally it is made using Gundu Chillies, Kalpasi or Phathar ke Phool (Black Stone Flower) and Indian shallots apart from a few other basic ingredients.
These 3 ingredients make this dish very unique and give it an earthy and robust flavor. You can make it as a thick masala or thin curry.
Serve it hot with Ghee Rice, simple Jeera Rice, Idli, Dosa or plain steamed rice.

Ingredients :
Marination :
600 gms Chicken (curry cut pieces with bones)
½ tsp Turmeric Powder
½ tsp Salt (or as per taste)
1 tbsp Lemon Juice
To make Chettinad Masala :
1 piece Black Stone Flower (Dagad Phool)
1 Star Anise
3 Green Cardamoms
1 small blade Mace (Javitri)
4 to 5 Cloves
1 inch Cinnamon Sticks (broken into pieces)
1 tbsp Coriander Seeds
½ tsp Fennel Seeds (Saunf)
½ tsp Cumin Seeds (Jeera)
½ tsp Peppercorns
4 nos. Dry Red Chillies
1 cup Grated Coconut
1 sprig Curry Leaves
*Other Ingredients* :
3 tbsp Vegetable Oil
2 sprigs Curry Leaves
3 Dry Red Chillies
100 gms Shallots (sliced)
1 medium size Onion (sliced)
1 tbsp Ginger Garlic Paste
2 medium size Tomatoes (finely chopped)
Salt as per taste
100 ml Water (use after rinsing the jar)
Note : tsp is teaspoon
tbsp is tablespoon
