Since then, people have been combining sweet and sour sauce with other ingredients like chicken, fish, and beef, among others. Residents of another province began making their own version of sweet and sour sauce, something thicker and contains ketchup. Sweet and Sour Fish 糖醋鱼
Ingredients:
Serves 4 pax

Marinated fish
===========
1.1kg [38.8 oz] fish (we used red snapper fish)
3 tablespoons water
1 teaspoon salt
2 stalks of spring onion (using the stem part only)
5g sliced young ginger

Coat the marinated fish all over with cornflour before frying.

Sweet and sour sauce
==================
5g of chopped young ginger
3 cloves of chopped garlic
8 tablespoons tomato ketchup
280ml [9.47 fl oz] water
2.5 tablespoons sugar
100g [3.5 oz] fresh tomatoes
80g [2.82 oz] pineapple
60g [2.12 oz] cucumbers
0.5 teaspoon salt
6 tablespoons rice vinegar
Some cornstarch solution
