Air Fryer Crispy Veggie Pockets:
Ingredients:
2 medium carrots - finely chopped
3 medium celery stalks - finely chopped
1/2 of a large red sweet pepper - finely chopped
1 inch of a leek - white part finely chopped
3 cremini mushrooms - finely chopped
1 tsp garlic powder
1/4 tsp ginger
handful of cilantry
1-2 tbsp of soy sauce or gluten free tamari, or coconut aminos
10 rice paper sheets (plus water to wet them)
1 tbsp avocado oil
Directions:
Saute veggies in a tbsp of water & soy/tamari/gf coconut aminos on high heat on a frying pan. Start with hard veggies like carrots, celery, red pepper, mushrooms. Wait until carrots and celery are half tender, then add leek.
Add garlic powder, ginger, chili flakes.
Once veggies are tender, remove from heat and add cilantro. Let cool while getting rest of stuff ready.
Once veggies are cooled a bit, add 2 heaping tbsps in the middle of a wet rice paper sheet. Fold the paper around it. Then add the pocket to another wet rice paper so it doesn't leak.
Lightly brush with avocado oil and place in air fryer tray. Do not let them touch and don't over crowd the tray.
Air fry at 390F for about 6-8 minutes. Every air fryer is different, so keep and eye on them so they don't burn.
