Welcome Back! This recipe is an Instant Pot recipe for cooking pork Carnitas. This will feed a lot of people!!!!! I used this recipe for tostadas, but also have been enjoying with rice and beans. This recipe doesn't simmer the meat in lard which is the traditional method, instead it uses the Instant Pot's pressure cooking to tenderize the pork shoulder with water, citrus and traditional spices. This yields the most tender pork at the end of the cooking cycle.

Ingredients for the Carnitas

* 4-6 lbs. pork shoulder slightly trimmed of excess fat and cut into 2-inch cubes
* 1 Tablespoon garlic powder
* 1 Tablespoon ground cumin
* 2 teaspoons dried oregano
* 2 teaspoons brown sugar
* 1 teaspoon guajillo chili powder (if you don't have this double up on the plain chili powder)
* 1 teaspoon chili powder
* 1 teaspoon smoked paprika
* 2 oranges sliced in half
* 1-3 lime sliced in half
* 1 cup water


Instructions

* Cut the pork shoulder up into 2 inch cubes. Wash with water and lime juice
* Combine garlic powder, chili powders, dried oregano, cumin, brown sugar, and smoked paprika.
* Rub the spice mixture evenly over the pork pieces and place in Instant Pot (no trivet).
* Squeeze the juice from the orange and lime over the seasoned pork. Place rinds pulp side down in Instant Pot and add 2 cups water.
* Make sure your sealing ring is in place on the lid. Lock the lid onto Instant Pot and set the steam release knob to the "sealing" position.
* Press the "manual" button and set Instant Pot for high pressure for 50 minutes. It will take about 10 minutes for Instant Pot to come to full pressure, then the display will show a countdown timer.
* Once the 50 minutes are up, allow the pressure to release naturally for 15 minutes, then release any remaining pressure. Open the lid.

Remove pork chunks and allow to cool on tray. Strain the liquid. Using forks, shred the pork. You can also your hands if the meat is not too hot.

Crisping Instruction

* Preheat oven broiler. Taste the pork for saltiness. You may want to sprinkle some additional salt on top. Ladle some of the broth over the shredded meat.
* Put shredded pork underneath broiler until tips of pork are browned and slightly crisp, about 3-5 minutes. (Don’t walk away from it. Keep an eye on meat to make sure it doesn’t burn or become overly browned).
* Store meat in the fridge with the broth. Meat also freezes well.

Serve with rice, burritos or tacos!!
