This lemon Posset recipe is easy: just three ingredients: lemons, heavy cream, and sugar. It's a tasty dessert with a zesty lemon flavor and creamy texture.
Ingredients:
2 medium Lemons
2 cup heavy cream
90g sugar
Instructions:
1. Cut the lemons in half and remove the pulp. Squeeze out the juice and set aside.
2. Combine the heavy cream and sugar in a saucepan over medium-low heat. Stir until the sugar dissolves.
3. Add zest the bottom of the lemon into the saucepan. Stir occasionally until the mixture comes to a gentle boil, then reduce the heat to a simmer. Continue stirring constantly for 2-3 minutes. You'll notice the mixture darkening in color and thickening slightly.
4. Strain the mixture through a sieve to remove any zest or lumps.
5. Add 3 tablespoons of the reserved lemon juice through the strainer as well. stir to combine thoroughly. The mixture will thicken more.
6. Pour the mixture into the lemon skins or any small dishes of your choice.
7. Refrigerate for 2-3 hours to set.
