Quick tasty Turkish lentil soup recipe
1 Potato
1 Carrot
1 Onion
1 Cup Red Lentils
1 1/2 tsp Salt
1 tsp Black Pepper
1 tbsp Tomato Paste
1 Cup Chicken Stock (can substitute for veg stock)
1 tbsp Flour
3 CutWater (+2 more cups if you prefer your soup more runny)
Dice all your vegetables, heat a pan with some oil add onions sauté until golden
Add your flour, mix, then add tomato paste mix until colour changes
now add carrots and potatoes mix and add your lentils, add 1 cup chicken stock
Now add 3 cups water (+2 more if you want it watery) add salt pepper and cook on low to medium heat for around 15-20 mins then blend.
Remove from heat serve with chilli oil and garnish with some fry mint
***To make chilli oil add oil to a pan with 1 tsp Aleppo chilli flakes and cook for about 1 min.
