Rice pudding, or “Phirni | Firni”, is a popular dish enjoyed by people of many cultures and cuisines. This food traces its roots to the grain pottage's of the Middle East.
“Firni, a sweet milky dessert, supposed to be eaten cold, made with broken rice and usually flavored with rose water and/or ground cardamom.
In our Phirni/Firni recipe, milk and sugar is thickened with coarse rice mixture and flavored with a dash of rose water and saffron milk that gives distinct aroma and color to the dish. We have also added almond powder that grants creamy texture, smoothness, and refreshing flavor. This dish is finished off with Pistachios and freshly cut Rose petals, that makes it a Shahi and Royal dessert.
Phirni/Firni recipe is the fantastic dessert for friends and family and is made ahead of time cooled and serve chilled.
If you are making this recipe for vegans, I would suggest you to use same nuts with almond or coconut milk, instead of Soya milk as it has beany flavor that might overpower the Phirni taste.

“Kheer”, the Indian name for firni, is used for making sweet milk puddings, usually made with rice. It is sometimes called as sheer, which stands for milk in Persian. There was a same version of kheer in Persia which was known as “Sheer Birinj”.
