Summer - berry season. I have lots of ripe blackcurrants right now, so it's time to make delicious Blackcurrant Jam!
Blackcurrant Jam
500g fresh or frozen blackcurrants
100ml water
350-400g unrefined panela or rapadura sugar
1 tsp fresh lemon zest (from about 1/2 lemon)
2 Tbsp fresh lemon juice
