Chinese Wonton Soup Recipe. I found this local recipe when I visited the city of Xinhui in southern China. Simple but delicious delicious Chinese Wonton Soup recipe. This is an authentic wonton soup recipe but you can change any of the ingredients if you like. Xinhui (Sunwui) was one of the original Four Counties in southern China where most of the immgrants to North America came from. The other counties were Hoiping (Kaiping), Toisan (Taishan) and Yinping (Enping). The name in brackets is in Mandarin.

Recipe
CHINESE WONTON SOUP
Package wonton wrapper
4 to 6 oz. ground pork
6 to 9 water chestnuts
1/2 cup wood ear mushrooms
4 to 6 Chinese mushrooms
1/2 to 1 tsp. sea salt (or other salt)
1 tsp. sugar
1 egg
1 teaspoon sesame oil
2 tablespoons greenonions
Soak water chestnuts. Cut off skin off water chestnut with a knife. Soak wood ear mushrooms
for at least 1 hour. Rinse and then cut into small pieces. Soak Chinese mushrooms for at least
1 hour or overnight. Cut Chinese mushrooms into small pieces. Be sure to cut out the stems of the mushrooms.
In a large bowl, put in the ground pork. Add the water chestnbuts, wood ear mushrooms and Chinese mushrooms into the bowl. Add salt, sugar and egg. Mix all the ingredients together with a fork or a pair of chopsticks.
To make wontons, take a wonton wrapper in your hand. Put 1 to 2 teaspoons of the filling on the center of the wrapper. Pull the sides of the wonton wrapper and squeeze, to hold the wonton together.
In a pot, have soup stock simmering. In another pot, bring some water to a bowl. Put in wontons. When the wontons float to the top, they are ready to be served. For frozen wontons, cook them a little longer.
In a large soup bowl, put in the wontons. Add soup broth. Put a dash of sesame oil. Top with some green onions. Enjoy!
Note: For a fast soup stock, put a 1/2 teaspoon of chicken soup base or boullion in 2 cups water. Add a dash of light soy sauce for flavour. For a basic soup stock, add chicken and/or pork bones to a pot of water. Simmer for 30 minutes or more.
