Jam squares recipe
INGREDIENTS
* 250g butter
* 1/2 cup sugar
* 2 eggs
* 1 teaspoon vanilla essence
* 3 cups flour
* 3 teaspoon baking powder
* 1/2 teaspoon bicarbonate of soda
* 1/4 teaspoon salt
* 1/2 cups strawberry jam (you can use store bought or any flavour)
For the Jam:
* 250g fresh strawberries (washed and finely chopped)
* 1/4 cup sugar
* 2 tablespoons lemon juice
Bring all ingredients to a gentle boil, stir, reduce heat and leave to simmer until it's set.
INSTRUCTIONS
1. Using a hand whisk, cream the butter and sugar together until creamy.
2. Add the egg and vanilla essence and beat until well combined.
3. Sieve in the flour,baking powder,bicarbonate of soda and salt and mix until a dough forms.
4. Then using your hands, press the dough together until it forms a ball. Use 1/4 of the dough then freeze for at least 20 minutes. Then spread the rest along the base of a greased baking tin. (I used a 30 x 20cm tin.)
5. Using the head of a fork, poke holes into the dough then spread on the jam generously.
6. Grate the refrigerated dough over the top of the jam.
7. Bake at 175 degrees Celsius for 30-35 minutes until dough is slightly browned on top.
8. Allow to cool and then slice into squares. Enjoy! 😋🥰
