My first encounter with kefir was in my teens.
My mom was making something she said was good for staying young.
It was white and she had been fermenting it on the countertop.
I saw this spongy looking thing floating in the milk, it looked like lion's mane mushroom.
I remembered her straining it.
She took the first sip and her face immediately puckered up.
She lamented that it was too sour.
Eventually, she decided to washed it all away.
I think that was kefir.
In my early 30s, I saw kefir in a shop.
Bought it and snuck it into the cinema with husband.
It was delicious but all commercial drinks were laced with sugar.
I didn't really know much about it then.
All I knew was, kefir was a more potent type of yoghurt.
After that, I pretty didn't think of kefir till 2023
Unknowingly, my body had been looking for it.
Our body is amazing.
It tells us when we need something.
2023 wasn't exactly my healthiest.
My body was craving for something good.
When I saw kefir in the shop, I immediately bought it.
It was sour but no where as near the reaction my mom had.
Maybe my mom was just melodramatic.
Or maybe, she put too little milk for the amount of kefir grains she had.
So the milk became over fermented too quickly, thus very sour.
Long story short, I knew kefir from stores were too expensive to keep up in the long term.
I wanted to drink a lot of it.
I just kept craving it like a pregnant lady.
Maybe somewhere inside me wasn't good.
Just that it's not showing yet.
But my body tells me, drink more kefir.
Make kefir with me! If you plan on buying kefir grains and is anxious on what to do for the first time, follow along with me. It's very easy with some careful planning.
I've kinda jumped into this head first without thinking too much. All I wanted was to drink kefir but it was too expensive to keep buying. Glass jars after glass jars pile up and it still wasn't enough to keep me satisfied. Therefore, going the homemade route was more sustainable. Even though it can be tiring at times, I am still happy to be getting all this probiotic goodness to drink, at least twice a day. I do sincerely enjoy drinking kefir. It was after I started making kefir that I started to listen to Donna Schwenk's podcasts and boy, I am happy to have started this kefir journey.
One thing I was pleasantly surprised when I first drank my homemade kefir was how pleasant it tasted. Not at all super sour like the ones in the store. Those have been fermenting for a long time and some of the bacteria would have died due to starvation. Most of the time when I buy kefir from the store, there was always a big whey separation, indicating that it's overfermented. It also means some of the bacteria would have died already before I drank it. Therefore, not as good for the body.
The only thing we constantly buy now is milk but it's still cheaper than if we were to buy kefir at the volume that I drink daily. I am very happy because I do believe a good gut equals a healthier, stronger body.
