In this video, DroydTDR "The Diamond Robots" and long-time TDR Fan StockNebula show you where to find the Pumpkin Pastures Eye of Ender to open the End Portal in the Stronghold. This is in the Echoing Void DLC for Minecraft Dungeons.

To get the Eye of Ender, you need to defeat an Endersent that has hidden in a secret place in Pumpkin Pastures. Find the secret entrance, and then battle your way to the Endersent's lair to get the Eye of Ender.
