Raisin Bread
3 C flour
3 TBS sugar
2 tsp salt
2 tsp cinnamon
1 TBS dry active yeast
2 TBS butter
1 C warm water
1/2 C raisins
Mix together flour, sugar, salt, cinnamon and yeast together in a large bowl.
Cut in butter using a pastry blender or fork.
Add water.
Mix dough with spoon until able to knead by hand. This can also be done in a stand mixer.
Knead dough on counter for 5-8 minutes, until well combined and no longer sticky.
Flatten dough and add raisins. Roll dough into log to enclose all of the raisins in the dough.
Allow to rise 2 hours.
Remove from bowl and place in loaf pan. Allow another 1-2 hour rise.
Bake at 375 F for 30-35 mins.
Allow to cool before slicing.
Homemade Pop Tarts
Filling:
3/4 C packed brown sugar
1 TBS flour
1 TBS cinnamon
1/2 tsp salt
2 TBS butter, melted
1/2 TBS vanilla
Pastry:
1 1/2 C flour
1/2 tsp salt
1 tsp sugar
1/2 C butter, cut in pieces
4-6 TBS cold water
Egg Wash:
1 egg
1 pinch salt
1 tsp water
Mix together brown sugar, flour, cinnamon and salt. Add butter and vanilla and stir until well combined.
Set filling aside.
For pastry, mix together flour, salt and sugar. Cut in butter using a pastry blender (or fork).
When butter is well incorporated, add cold water by Tablespoonful until it is a pie dough consistency.
Knead dough carefully until well formed and divide into two equal balls.
Roll first ball out thin and slice into 8 rectangles.
Do the same with the second ball.
Place 8 rectangles on parchment paper. Top each rectangle with 1-2 TBS filling, spreading to fill all but outer 1/4 inch of pastry.
Place another rectangle on top of each of the bottom pieces.
Press edges together with a fork.
Bush each pastry with egg wash.
Bake pastries at 350 F for 20-25 minutes.
Granola
6 C oats
1 1/2 C chopped walnuts, pecans or almonds
1 tsp salt
1/2 C flax seeds
1/2 C coconut
1/2 C maple syrup
1/2 C brown sugar
1/2 C coconut oil or butter, melted
In a large bowl, combine oats, nuts, salt, flax seed, and coconut.
In separate bowl, combine maple syrup, brown sugar and oil. Stir well.
Pour wet ingredients into oat mixture and stir until oats are well coated.
Place on lined cookie sheet in a thin layer and bake at 250 F for 60 minutes, stirring every 10 minutes.
Store in airtight container.
