This is a no-knead, super wet dough, which allows it to come together in no time without a stand mixer and without kneading. Baked in a buttered muffin tin, the rolls emerge crusty and golden on the exterior and soft, and tender on the interior.
I love the flavor fresh thyme adds to the dough, especially in the fall in winter, but you can omit if you like. Also, feel free to adapt the recipe as you wish with other flavors: olives, rosemary, nuts, cheese, etc.This is a long-time favorite recipe, an adaptation of my mother's simple peasant bread recipe.
