Ingredients
1.2kg baby potatoes
1/2tsp garlic granules
1/2tsp dried oregano
1tsp dried rosemary
1/2tsp salt
1/2tsp pepper
1 1/2tbsp olive oil
Large handful of fresh parsley (to serve)
Method
Step 1 Prep the baby potatoes by making slits that don’t go all the way through to the other side. Place all the potatoes into a roasting tray and pour in the olive oil. Sprinkle over all of the seasoning and then carefully coat all of the potatoes
Step 2 Place the potatoes in the oven for 40 mins until golden brown. Once they’re cooked, take the potatoes out of the oven and stir in some freshly chopped parsley.
