Maple Bacon Chicken & Waffles

for Kroger featuring Cheerios

Serves: 2
Prep Time: 15 minutes
Cook Time: 20 minutes

Ingredients:
Chicken:
1 pound boneless, skinless chicken breasts (two breasts)
1 cup buttermilk
1/2 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1 large egg, whisked
1 cup Cheerios, crushed
1 tablespoon melted butter
Waffles:
1 (7.5 ounce) package corn muffin mix
3/4 cup buttermilk
1 large egg
1 tablespoon maple syrup
2 tablespoons melted butter
1/2 cup chopped cooked bacon

Directions:
Chicken:
Combine chicken and buttermilk together in a large bowl.
Place in refrigerator for at least 1 hour.
Preheat oven to 450 degrees F and line a baking sheet with a silicone mat.
Place (flour, salt, and pepper), egg and Cheerios separately into three shallow dishes.
Dunk chicken into flour, then egg, then cheerios until fully covered (see video for visual).
Place chicken onto prepared baking sheet and drizzle each breast with melted butter.
Bake in preheated oven until chicken is cooked through, about 15-18 minutes.
Remove from oven and serve with waffles and a generous drizzle of maple syrup!
Waffles:
Spray waffle maker with cooking spray and preheat according to model user guide.
In a large bowl whisk together muffin mix, buttermilk, egg, maple syrup, butter, and bacon.
Fill waffle maker with 1 cup mixture and cook according to model user guide.
Repeat with remaining mixture.
Top cooked waffle with chicken breast and a drizzle of maple syrup!
