Recipe:
CHOCOLATE DREAM CAKE
½ cup shortening
1 cup water
4 squares chocolate
2 cups sugar
2 eggs
2 cups sifted Robin Hood Enriched Flour
1 tsp salt
½ tsp [baking] soda
1½ tsp vanilla
½ cup sour milk or buttermilk
HEAT shortening, water and chocolate in top of double boiler until chocolate is melted.
ADD sugar; cool mixture; add eggs and beat well to blend.
ADD sifted dry ingredients; beat until real smooth.
BEAT in vanilla and sour milk (or buttermilk); beat again until smooth.
POUR into 2 nine inch pans which have been paper lined and greased.
BAKE in moderate oven (350॰F) for about 30 to 35 minutes.
LET remain in pans for at least 5 minutes before removing.
FILLING
1 tsp cornstarch
½ cup sugar
2 tbsp butter
3 well beaten egg yolks
⅔ cup milk
¼ tsp salt
½ tsp vanilla
¾ cup toasted almonds
MIX cornstarch and sugar, cream in the butter.
ADD well beaten egg yolks and milk.
COOK in top of double boiler, stirring constantly until mixture thickens, add salt and vanilla, and chopped almonds.
COOL thoroughly, then spread between layers of cake.
FROSTING
¾ cup brown sugar
¾ cup white sugar
Pinch cream of tartar
⅓ cup hot water
3 egg whites, well beaten
1 tsp vanilla
COOK first four ingredients together until syrup spins a long thread; remove from heat and pour in fine stream into well beaten egg whites.
BEAT until mixture holds shape and does not run, add vanilla.
SPREAD over top and sides of cake.
YIELD 16 servings.
