Eggplant balls are the best alternative recipe for Classic "Polpette"

Ingredients for 4 servings:
300g eggplant
salt to taste
3-4tbsp olive oil
Basil
3-4 garlic cloves
100-150g bread crumbs
parmesan to taste
1 egg
50g provolone
2-3tbsp vegetable oil

Tips:
you can taste this with tomato sauce or just after frying them and you can keep Eggplant balls in the freezer for up to 2 months
