Combination of steam rice cake (puto) & leche flan in one dish.
Puto Flan Recipe:
For Flan mixture:
8 egg yolks
1 can condensed milk
1 tsp. lemon juice
For puto mixture:
2 cups all purpose flour
1/2 cup granulated sugar
1 can evaporated milk
1/4 cup cup melted butter/margarine
2 tsp. baking powder
4 white eggs
Procedure:
1. For flan mixture, In a bowl mix egg yolk, condensed milk & lemon juice then set aside.
2. For puto mixture: mix all dry ingredients - sifted all purpose flour, baking powder, sugar & salt.
3. In a separated bowl mix all wet ingredients - whole eggs, evaporated milk & melted butter/margarine
4. Combine dry & wet ingredients. Use whisk or handheld mixer. Make sure the mixture has no lumps.
5. Grease the molds then pour the flan mixture about half an inch. Steam for 10-15 minutes.
6. After 10-15 mins. pour the puto mixture (do not full the mold give space for puto to rise)
7. Steam again for 20 minutes or you can check one by using toothpick ( if you point toothpick it should be clean) then turn off the stove. Put clean shirt/cloth or cheese cloth( katya) in a lid cover to absorb the water.
8. Rest them for 15 minutes or less before unmold.
