Tambdi Bhajji/ Red Amaranth leaves/ Harive Soppu is a commonly available greens in Coastal Karnataka. The red variety is specially grown in this region and tastes different from the green ones. In this recipe, the greens are cooked and then simmered in a simple coconut masala. It is finished off with a garlic tempering. It is a simple yet delicious dish which goes well with the rice. Ingredients:
Red Amaranth leaves - one big bunch
Salt - To taste
For Masala:
Grated coconut - 1/2 cup
Dry red chilli (byadgi), roasted - 4-5
Tamarind - small marble sized
Salt - To taste
For Tempering:
Coconut O il - 2-3 tsp
Garlic flakes - 5-6
