This is a Kaju Gulab Roll! It is flavoured with Rosewater and garnished with rose petals and pista to recreate the familiar flavour of Kaju Pista Roll. To make it even more delicious, paneer or cottage cheese is added to it. This is a perfect recipe for all festivals like Rakshabandhan, Holi, Diwali.

Recipe :
Kaju Gulab Roll
Preparation Time: 10 minutes + Soaking Time
Cooking Time: 20 minutes
Makes: 500g approx.
Ingredients :
200 g Cashew Nut
100ml Milk 100
200g Paneer
3/4 cup Sugar
1 tsp Rose Water
1 tbsp ghee
Rose Petals
Pistachios
Method:
Soak the cashew nut in the milk for 2 hours in the refrigerator.
Grind to a smooth paste.
Add the sugar and blend again. Add crumbled paneer and blend till you get a smooth paste.
Heat the ghee in a pan. Add the mixture and cook on low heat stirring continuously. Cook till the mixture starts coming together like a dough ball.
Add in the food colour (optional) and the rose water and mix well.
Remove on a plate and allow to cool down.
Break into equal sized balls and roll out into cylinders.
Garnish with rose petals and pistachios and chill before serving.
