Learn how to make Flaky & Crispy egg paratha recipe | Homemade/better than store bought, flaky layered egg paratha roll - Anda paratha that is so healthy and yummy. make it for the weekdays or for the weekend, every one will sure to like it.
Ingredients for the dough,
White/all-purpose flour -2 cups
Salt -1/2 tsp/per taste
Lukewarm water -3/4 cup( or as needed to make soft/smooth dough)
Oil -1 tbsp
Kalonji - 1/2 tsp
melted butter - 1 tbsp
Eggs - 2
Red chili flakes - 1/4 tsp
Dry Oregano-1/4 tsp
Green chilis fine, chopped - 1-2
some chopped cilantro
Salt- 1/4 tsp/per taste
Method,
Add 2 cups of all-purpose flour to a bowl and salt mix. Add lukewarm water a little bit at a time to make a soft and smooth though.
grease the dough top with some oil, cover & rest it for 15 minutes under a towel.
After resting, knead the dough well and divide the dough into 4 equal portions
Take one roll and roll it out very thin. brush some melted butter or ghee on top, sprinkle some flour, and then kalonji seeds.fold it as shown in the video.apply ghee & flour.and fold to make a roll. set aside all rolls for 15 minutes.add eggs to a bowl. add Red chili flakes,
Dry Oregano, Green chilis fine, chopped, some chopped cilantro, and salt per taste.mix & set aside.
Roll out the paratha, make sure it is not too thin and or too thick
add paratha to the heated pan on medium-low heat cook, Pratha for 1-2 minutes per side or until looks almost cooked.
add some egg mix on the top, flip the paratha and cook to likeness.apply some ghee or oil to make it crispy.
