Blueberry Cream Cheese Pastry Puff
Ingredients:
- 1 cup blueberries
- 1/4 cup water
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1 sheet puff pastry dough
- 2 tablespoons butter, melted
- 4 oz cream cheese, softened
- 1/4 cup sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- Powdered sugar for dusting
Instructions:
1. **Prepare the Blueberry Mixture:**
- In a small saucepan, combine blueberries, water, sugar, and lemon juice.
- Cook over medium heat until the blueberries release their juices and the mixture thickens. Remove from heat and let cool.
2. **Prepare the Pastry:**
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry dough on a lightly floured surface and cut it into 8 equal squares.
- Cut a smaller square out of the center of each square, leaving a border around the edges.
- Twist the corners of each square and brush the entire pastry with melted butter.
- Place the pastries on the prepared baking sheet.
- Poke holes in the center of each pastry with a fork to prevent puffing.
3. **Bake the Pastry:**
- Bake in the preheated oven for 12-15 minutes, or until golden brown.
- Remove from the oven and let cool slightly.
4. **Prepare the Cream Cheese Filling:**
- In a mixing bowl, combine cream cheese, sugar, egg yolk, vanilla extract, and lemon zest.
- Whisk together until smooth and creamy.
5. **Assemble the Pastries:**
- Once the pastries are done baking, gently push down the centers to create a well.
- Fill each well with the cream cheese mixture.
- Top with a spoonful of the blueberry mixture.
6. **Finish and Serve:**
- Dust the pastries with powdered sugar.
