Looking to cook up something different for your next weekend brunch? Swedish pancakes are so easy to make and so delicious! Somewhat similar to French crepes but slightly thicker, softer, and with crispy buttery edges.
Classic Swedish Pancakes 🇸🇪 🥞
3 eggs
1 cup all-purpose flour
2 1/2 cup milk
1/2 tsp salt
1/4 cup unsalted butter, softened
In a bowl, mix the flour with 1 cup of milk, eggs, and salt. Whisk to a smooth batter. Finish with the rest of the milk and whisk.
Set aside to let the gluten thicken the batter slightly, for about 20-30 minutes.
Melt butter in a cast-iron pan (or regular non-stick pan if you don’t have a cast-iron), and fry thin pancakes in the pan.
Serve with whipped cream and strawberry jam, or whatever else you prefer! These pancakes go with almost everything, sweet or savory.
