Ingredients:
Dough:
1 1/2 cup flour
1/4 cup sugar
110g butter
20 ml ice water
Filling:
1 3/4 cups pumpkin puree
1 egg
3 egg yolks
3/4 cup brown sugar
1/2 tsp cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1/8 tsp ground cloves
1 cup heavy cream
1 egg white
Directions:
1. Add the flour, butter, sugar, and mix with a form. Add the ice water and mix until form the dough.
2. Cover the dough with clingfilm and refrigerate for a minimum of 30 minutes.
3. Roll the dough, put it into a 25 cm pan, fold the edge under and pinch into a crimped pattern. Refrigerate for 15 minutes.
4. Place parchment paper on pie, add some pie weights or dried beans and bake for 17 minutes at 220C. Remove the beans, brush the end with egg white and bake for another 5 minutes. Let the crust completely cool.
5. Add the pumpkin puree, eggs, sugar, spices and mix well. Add the heavy cream and mix gently. Be careful to have no bubbles.
6. Pour warmed filling into the blind-baked pie crust.
7. Bake at 170C for about 45-55 minutes.
