This is a very popular dish in Malaysia, always served in Indian and Malay weddings alongside Ghee Rice or Briyani.😋❤
It's so simple to make and tastes irresistibly good, you can make this quick pickle within 60mins.😁

INGREDIENTS for Sweet & Spicy Cucumber-Carrot Acar (pickle)/ Acar Rampai🥒🥕🌶
■ 1 cucumber
■ 1 carrot
■ 2 fresh red chillies
■ 10 shallots
■ salt to taste
■ 1/2 cup - 1 cup vinegar
■ 2 tbsp sugar
■ 3 tbsp roasted sesame seeds (optional)
■ 1/3 cup dry roasted & crushed peanuts (optional)
INGREDIENTS for Chilli Paste
■ 10-15 dry red chillies (soaked for 15mins in hot water)
■ 1 red onion
■ 3 cloves garlic
■ 2 inch ginger
■ 4 tbsp water
