●● Recipe:
For the crust:
-2/3 cup gluten free cookies
-3 tbsp. melted butter
For the cheesecake layer
-1 cup cream cheese
-4 tbsp. sugar
-3 1/2 tbsp. yogurt
-2/3 cup mango puree
-2/3 cup whipped cream
-3 tbsp. cold water
-2 1/2 tsp gelatin
For the jelly layer
-2 tsp gelatin
-4 tbsp. cold water
-1 tbsp. sugar
-3/4 cup mango puree OR mango juice
■ For the crust:
1. Crush the cookies using a food processor or rolling pin
2. Add the melted butter and mix it into the cookie crumbs until it resembles a find sand mixture
3. Using a cup or spatula, press in the cookie crumbs into a 6-inch baking dish
4. Refrigerate for 10 minutes
■ For the cheesecake layer:
1. Mix the cream cheese using a spatula
2. Add in the sugar
3. Add in the yogurt
4. Add in the mango puree
5. In a separate bowl add the gelatin and let it bloom for 5 minutes in cold water
6. Microwave the bowl for 15 seconds
7. Take it out of the microwave, add the some of the cream cheese mixture into the gelatin mixture
8. Mix all the gelatin mixture into the cream cheese mixture and gently fold
9. Gently mix in the whipped cream
10. Add the cream cheese mixture on top of the cookie crumb layer and refrigerate for at least 2 hours
■ For the jelly layer:
1. Bloom gelatin with cold water for 5 minutes
2. Microwave for 15 seconds
3. Add sugar and mix
4. Add in the mango puree or mango juice and mix it in
5. Add the jelly layer on top of the cream cheese layer and refrigerate for at least 2 hours
