Creamy white sauce pasta with veggies is one of the easiest and best pasta recipes, here's a recipe for white sauce pasta:

Serve - 3 to 4
Prep Time - 15 minutes
Cook Time - 10 to 15 minutes

Difficulty Level - Moderate

Ingredients:

250 GM Pasta (penne, fettuccine, or any type you prefer)
Water for boil
1 tablespoon Olive oil (for sauteing)
1.5 tablespoons garlic, minced
2 tablespoons butter
400 GM chopped spinach
250 GM Mushroom
1.5 cups bell peppers (cubed)

Sauce Preparation
1 tbsp butter
1 tbsp minced garlic
2 tablespoons all-purpose flour
1 1/2 cups milk (add gradually)
1 tsp oregano
1 tsp basil
1 tsp chili flakes
1/2 cup grated Parmesan cheese

Instructions:

1. Cook the pasta according to package instructions in a large pot of boiling salted water until 80% done. Drain and set aside.

2. In a pan, add olive oil over medium heat. Add the minced garlic and saute for 1-2 minutes until fragrant.

3. Add Spinach, mushroom and mix well, cook for 12 to 15 minutes on high flame.

4. Once spinach and mushroom are cooked then add 1.5 cups colored bell peppers (cubed).

5. Saute for 1 minute.

6. Add salt to taste, and remove the vegetables in another pot.

7. Heat a pan or pot, add 1 tbsp butter, add the minced garlic, and saute for 1-2 minutes on med flame until fragrant.

8. Add all-purpose flour, stir continuously for 40 to 60 seconds then switch off the flame.

9. Slowly pour in the milk while whisking continuously to avoid lumps. Cook the sauce, stirring frequently, until it thickens, about 5-7 minutes.

10 . Add Oregano, Basil, and chili flakes.

11. Add the pasta and cooked vegetables to the sauce and cook for another 1-2 minutes until they are tender or until well coated.

12. Add and stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.


Serve the vegetable white sauce pasta hot, garnished with chopped fresh parsley if desired.
