Good morning dear friends. Welcome to 2023! Hope you all had a wonderful Christmas and New Year. Are you looking for easy meal ideas for a busy weekday night or planning to cook something simple and flavourful for a romantic dinner date? In that case 'Salmon en Papillote' might be the right recipe for you. The steam-cooking process (in the parchment parcel) ensures that the fish remains beautifully moist and tender. You can customize the recipe by using vegetables of your choice. Use pre-boiled and halved baby potatoes/ cherry tomatoes/ blanched asparagus/ beans or sugar snap peas/ thinly sliced zucchini/ fennel bulb or simply a handful of baby spinach. For a healthier version replace butter with 2 tbsp. of olive oil. Vegetables can be prepped in advance. You can also use snapper or barramundi fillet, if salmon isn't available.
Tips:
1. Pat dry the salmon fillet thoroughly with a kitchen towel.
2. Place vegetables sparingly to prevent the parcel from becoming too heavy and cause a leak.
3. Tightly seal/ secure the edge of the parcel, to prevent any steam from escaping.
4. The parcel will puff up, during the cooking process. Allow it to deflate before making an incision.
5. Tastes best right out of the oven.
