Pollo al caldero ingredients:

• 2lbs bone-in chicken (or 1 whole chicken)
• 1/2 tsp all-purpose seasoning
• 1/2 tsp creole seasoning (sub for extra all-purpose seasoning)
• garlic powder to taste
• black pepper to taste
• oregano to taste
• 1/2 tsp- 3/4 tsp white or packed brown sugar
• 2 tsp sofrito
• 2 tsp tomato sauce
• 1/3 packet Sazón con culantro y achiote
• 1 bay leaf
• enough water to almost cover chicken
