Groats are the hulled, whole, and unbroken inner kernels of the oat, and are the source of almost every other oat product available. They contain all three parts of the oat, making them the most nutritious oat product. We kiln them for two reasons. The first is to achieve a nice toasty flavor. The second is to inactivate the enzyme that causes oats to go rancid, thus creating a more shelf-stable product. The result is a healthy, chewy texture that’s ideal for cereals, casseroles, cookies, and more.
